Process - Directpress, then a natural alcoholic fermentation starts on tanks. During the fermentation the juice is racked from its lees several times. The whole process is natural without any additives of yeast or sulfites. A natural second fermentation on bottle with no dosage after disgorgement.

Aging - Minimum twelve months sur latte before disgorgement by hand.

Production - 450 bottles.
